Ingredients
3 leeks, white part only, thinly sliced or 3 white onions
4 tablespoons butter
1/2 cup fish broth
1/4 teaspoon salt
Dash of nutmeg
2 (I pound) mackerel
1/4 teaspoon powdered saffron
Directions
Cook the leeks in boiling, salted water for 5 minutes and drain.In a small, heavy saucepan, melt 2 tablespoons butter.
Add the leeks and saute over low heat for several minutes without browning.
Add the broth, salt and nutmeg.
Place the mackerel in a buttered oven-proof dish and sprinkle with saffron.
Spoon the leek mixture over the fish and dot with the remaining butter.
Bake in a preheated 400° oven for 15 minutes.
