 Garlic1 Clove (5 gm), minced
 Canola oil2 Tablespoon

 Canned mackerel15 Ounce, drained and flaked (1 Can)
 Radishes1 Cup (16 tbs), thinly sliced
 Boston lettuce head1 , torn into pieces
 Watercress leaves1 Cup (16 tbs), firmly packed

1) In a large bowl, whisk together the vinegar, mustard and garlic.
2) Slowly whisk in the oil in the vinegar mixture.
3) Stir in the parsley, chives, and tarragon.
4) Add the mackerel and toss gently.
5) Cover and refrigerate for 1 to 2 hours.
6) Add the radishes and toss gently.

7) Line a platter with the lettuce and watercress.
8) Place the mackerel salad on the greens.
9) Serve a lemon wedge on side if desired.
