Ingredients
1/2 lb. rigatoni, cooked
1/4 basic recaito (2 TBSP cilantro, 2 TBSP olive oil and 2 TBSP garlic blended in food processor)
1 TBSP capers
2 TBSP annatto oil
2 lb chicken pieces seasoned in adobo
1 c. tomato sauce
1/4 c. ham diced
1/4 c. mansanilla olives, sliced
1/2 c. parmesan grated
1/2 tsp. black pepper
Directions
1. Mise en place!
2. Begin water boiling for pasta
3. Heat the oil in a large skillet
4. Saute the ham and recaito over medium heat for 3 minutes
5. Add the chicken, olives and capers cook for 5 minutes
6. Add the tomato sauce and bring to a boil
7. Reduce to medium-low and cook, covered for 30 minutes
8. Cook pasta for 10-12 minutes or until al dente
9. Drain and cool pasta
10. Toss in pasta and cheese
11. Enjoy!
