Ingredients

 Almonds4 Ounce
 Sugar6 Ounce
 Egg whites2 Small
 Almond essence1/4 Teaspoon
 Granulated sugar
 Blanched almonds24

Directions

GETTING READY
1) Preheat oven moderate to 350°F, 180°C or Gas No. 4

MAKING
2) In a mixing basin measure ground almonds and sugar.
3) Beat in lightly mixed egg whites a little at a time.
4) Sprinkle almond essence over it.
5) Beat to make a smooth, stiff mixture.
6) Grease two baking trays with vegetable fat.
7) Dust with flour and get rid of excess flour.
8) Alternately line the trays with rice paper.
9) Fill mixture into a cotton or nylon piping bag fitted with a 1/2-inch (1-cm) plain piping tube.
10) Pipe on to the prepared baking trays in moulds each the size of a 2p piece.
11) Sprinkle sugar over it and garnish with almond.
12) Place in oven and bake for 15 minutes.
13) Let stand for few minutes to cool.
14) Loosen the base with spatula and then lift off the tray.

SERVING
15) Serve sliced.
