Macaroni Fruit Salad Recipe
Ingredients
1 1/2 cups uncooked macaroni rings
1 tablespoon cornstarch
1 tablespoon sugar
1 can (30 ounces) fruit cocktail, drained (reserve 1/2 cup syrup)
2 tablespoons lemon juice
1 cup frozen whipped topping (thawed)
1/4 cup maraschino cherries, cut into halves
Directions
Cook macaroni rings as directed on package; drain.
Mix cornstarch and sugar in saucepan.
Gradually stir in reserved fruit cocktail syrup and the lemon juice.
Cook over medium heat, stirring constantly, until mixture thickens and boils.
Boil and stir 1 minute; stir into hot macaroni rings.
Cover and chill at least 4 hours.
Fold whipped topping, fruit cocktail and cherries into macaroni rings.
(Can be served immediately.) Cover and refrigerate.
At serving time, stir Macaroni Fruit Salad.
If desired, serve on greens.
