Ingredients
Elbow macaroni - 1 pound
Butter - 1/4 pound
Sweet red onions - 1/2 cup, chopped
Green pepper - 1/2 cup, chopped
Salt - 2 teaspoons
Pepper - 1 teaspoon
Angostura aromatic bitters - 1 tablespoon
Creamed ricotta cheese – 1 cup or
Cottage cheese, grated parmesan and romano cheese, mixed – 1 cup
Directions
MAKING
1. In a saucepan cook elbow macaroni according to package directions, drain and keep aside.
2. In a pan saute onions and green pepper in some of the butter until onions are transparent, but not brown.
3. Melt rest of butter and add salt, pepper and Angostura aromatic bitters.
4. Mix drained hot macaroni with onions, green pepper and seasoned butter.
5. Add Ricotta or cottage cheese and mix thoroughly.
6. Fold in grated cheese and mix well.
7. Place over very low flame until hot, stirring constantly.
SERVING
8. Serve immediately with additional grated cheese.
