Macaire Potatoes Recipe

Ingredients
2 1/4 pounds baking potatoes
6 tablespoons (approximately) softened butter
1 teaspoon salt
1/8 teaspoon white pepper
Directions
Early in the day, or as much as 24 hours ahead, bake the potatoes until cooked through.
Let cool just until they can be handled, then peel potatoes or scoop out their flesh and place it in a bowl.
While potatoes are still hot, mash them well, stirring in 2 tablespoons butter, salt, and pepper.
Cool, cover, and refrigerate the potatoes until needed.
When you are ready to fry them, form the potatoes into 12 balls and flatten them slightly with the palms of your hands.
Fry potatoes in enough remaining butter, 2 to 3 minutes on a side, until crisp golden crusts develop.
Drain briefly.
