Ingredients

 6 -170 g boneless, skinless chicken breasts
 Macadamia nuts125 Milliliter
 Parmesan cheese60 Milliliter, grated
 250 ml fine dry bread crumbs
 Melted butter60 Milliliter

Directions

Wash and pat dry the chicken breasts.
Combine the nuts, cheese and bread crumbs in a small mixing bowl.
Dip the chicken in the melted butter, then dredge through the crumb mixture.
Place into a small casserole dish.
Bake in a preheated 350°F (180°C) oven for 40-45 minutes or until chicken is golden brown.
Serve at once with an Apricot Raspberry Sauce.
