Lyonnaise Potatoes Recipe
Ingredients
| Shortening or oil - 1/4 cup | ||
| Raw potatoes - 4 cups, peeled and cut in 1/2 cubes | ||
| Small onion | 1 | |
| Salt | 1 Teaspoon | |
| Pimientos | 4 | |
| Parsley | 2 Tablespoon, minced | |
Directions
MAKING
1. In a skillet, heat the shortening and add the potatoes to the hot oil
2. Add the onions and the salt to the potatoes and cook till tender
3. Add the pimiento and the parsley and mix carefully. Cook till the potatoes are tender and cooked through.
SERVING
4. Serve hot
