Ingredients

 Lychee20 Ounce, drained
 Cashews1 Tablespoon, finely chopped
 Crabmeat2 1/2 Ounce, canned
 Mayonnaise1 Tablespoon
 Light soy sauce1 Teaspoon
 1 green onion, finely cut
 Lemon juice2 Teaspoon, strained
 Red ginger or red pepper, for garnish
 Shredded lettuce

Directions

1 Combine cashews, crabmeat, mayonnaise, light soy sauce, green onion and lemon juice. Pack into lychee fruit.
2 Top each with a thin slice of red ginger or red pepper. Arrange on finely shredded lettuce and serve chilled.
