Lucca Augen Recipe
Ingredients
4 slices white bread, crusts removed
1/2 Ib. lean boneless beef, finely ground
2 egg yolks, slightly beaten
1/2 medium onion, grated
Salt
Pepper
Worcestershire sauce
1 small can caviar
4 fresh oysters
Directions
Toast the slices of bread.
Mix ground beef thoroughly with the egg yolks.
Season with onion, salt, pepper and Worcestershire sauce.
Spread the mixture 3/4 inch (1 centimeter) thick on each toast square.
Top each square with caviar and a raw oyster so that it gives the appearance of an eye with an eyebrow.
