Lovely Layered Lunch Recipe
This layered lunch recipe is a lunch salad recipe prepared with low fat cottage cheese. Savory and fresh, this light lunch salad is flavored with worcestershire sauce an dry mustrd. Chilled and served, this lovely salad is great to take to work too.
Ingredients
| Head of lettuce | 1 Small | |
| 2 sm. Bermuda onions, thinly sliced and separated into rings | ||
| Zucchini | 2 Cup (16 tbs), thinly sliced | |
| Cherry tomatoes | 2 Cup (16 tbs), halved | |
| 4 oz. low-fat cottage cheese, blended | ||
| Worcestershire sauce | 1 Teaspoon | |
| Dry mustard | 1/2 Teaspoon | |
| 1 cup low-fat yogurt | ||
Directions
1. Layer lettuce, onion, zucchini, and cherry tomatoes in a large bowl.
2. Combine blended cottage cheese, Worcestershire sauce, and mustard. Stir in yogurt.
3. Spoon over layered vegetables. If desired, sprinkle with paprika.
4. Cover and refrigerate 4 to 6 hours or overnight.
