Louisiana Hot Pot Recipe

Ingredients

 
2 pounds cook-before eating ham, cut in 1-inch cubes
 
1/4 cup unsifted all-purpose flour
 
2 teaspoons salt
 
1 teaspoon curry powder
 
1/4 teaspoon pepper
 
6 medium-size yams or sweet potatoes, pared and cut in 1/4-inch-thick slices
 
4 leeks, trimmed and sliced OR 2 medium-size onions, sliced
 
1 pound fresh peas, shelled (1 cup) OR 1 package (10 ounces) frozen green peas
 
1/4 cup sliced stuffed olives
 
2 cups boiling water
 
2 tablespoons butter or margarine

Directions

1 Trim all fat from ham.
Shake cubes, a few at a time, with flour in a paper bag to coat well.
2 Mix salt, curry powder and pepper in a cup.
3 Layer vegetables and meat into a 12-cup deep baking dish this way: Half of each of yams or sweet potatoes, leeks or onions, ham, peas and olives, sprinkling each layer lightly with season-ing mixture.
Repeat with remaining vegetables, ham and seasoning mixture.
4 Pour boiling water over; dot with butter or margarine; cover.
5 Bake in moderate oven (350°) for 3 hours, or until ham is tender.
