Ingredients

 
2 cups cooked lentils
 
1 cup cooked corn
 
2 tablespoons sunflower oil
 
1 tablespoon tarragon vinegar
 
1 teaspoon water
 
1 tablespoon minced watercress
 
1 tablespoon minced fresh parsley
 
1/2 teaspoon thyme
 
3 slices red onion, separated into rings (garnish)
 
1 hard-cooked egg, sliced (garnish)

Directions

Combine the lentils and corn in a serving bowl.
In a small bowl, mix together the oil, vinegar, water, watercress, parsley, and thyme.
Pour over the lentils and corn and toss lightly until combined.
Top the salad with the onion rings and egg slices, if desired.
