Louisiana Beans And Rice Recipe
Ingredients
1 tablespoon vegetable oil
1 cup chopped onion
1 large green pepper, chopped
2 cloves garlic, minced
1/2,teaspoon dried thyme leaves, crushed
1/4 teaspoon dried oregano leaves, crushed
2 cans (16 ounces each) red beans or pinto beans, drained
1 can (10 3/4 ounces) Condensed Tomato Soup
1 cup diced cooked ham or smoked sausage
1/4 teaspoon ground red pepper (cayenne)
Hot cooked rice
Directions
In 2-quart microwave-safe casserole, combine oil, onion, green pepper, garlic, thyme and oregano.
Cover with lid; microwave on HIGH 5 minutes or until vegetables are tender, stirring once during cooking.
Stir in beans, soup, ham and red pepper.
Cover; microwave on HIGH 5 minutes or until hot.
Stir.
Reduce power to 50%.
Cover; micro wave 15 minutes or until flavors are blended.
Cover with lid; microwave on HIGH 5 minutes or until vegetables are tender, stirring once during cooking.
Stir in beans, soup, ham and red pepper.
Cover; microwave on HIGH 5 minutes or until hot.
Stir.
