Lotus Roots Cooked With Apples Recipe
Ingredients
| 2 lotus root stems | ||
| 5 apples, peeled, cored, each cut into 4 pieces | ||
| 3 green cardamoms, crushed seeds only | ||
| Ginger powder | 1 Teaspoon | |
| Fennel powder | 1 Teaspoon | |
| 5 green chillies, deseeded and kept whole | ||
| Brown sugar | 3 Teaspoon | |
| Salt | To Taste | |
| Pure ghee | ||
Directions
Clean, wash and cut the lotus roots into large 2" pieces.
Place a vessel on the fire with 1/2 cup of ghee on a medium flame. When hot, lower the heat and lightly fry the lotus stem pieces and the apple pieces in small batches till red and golden in colour. Use more ghee if needed. Drain in a sieve.
Place a clean vessel on the fire and put in 2 tablespoons of ghee. Allow to heat and add the cardamom seeds, ginger-cumin-fennel powders and the green chillies. Place on low heat and sprinkle some salt and add 1 cup of water. Put in the lotus root pieces and apples and allow to simmer for 7 minutes. Sprinkle over the brown sugar and cover and keep warm till needed.
Serve with hot rotis.
