Lotus Root Soup Recipe
Ingredients
4 jujubes, softened in water to cover
8 cups Basic Chinese Chicken or Pork Broth
1 strand dried turnip green, well washed (optional)
5 or 6 dried lotus roots, soaked in water to cover
2 hours and halved or quartered, or 1 pound fresh lotus roots, scraped and sliced
1 dried tangerine peel, softened in water to cover 10 minutes
4 to 6 dried forest mushrooms, softened in water to cover and slivered
Directions
Slice jujubes, discarding pit; combine with rest of ingredients, cover, bring to boil, lower heat and simmer gently 2 hours.
Remove tangerine peel and turnip green before serving.
