Long Island Scallop Sadte Recipe
Ingredients
| 2 tablespoons unsalted butter or margarine | ||
| 1 pound bay scallops | ||
| Garlic | 1 Clove (5gm), minced | |
| 2 tablespoons white wine or fresh lemon juice | ||
| Salt | 1/8 Teaspoon | |
| Red cayenne pepper | 1 Dash | |
| Parsley | 1 Tablespoon, minced | |
| Lemons | 2 Large, unpeeled (Garnish:) | |
Directions
1. In a 10-inch skillet, melt the butter over moderately high heat. Add the scallops and garlic and cook, uncovered, stirring occasionally, for 4 minutes or until the scallops are opaque.
2. Add the wine, salt, and ground red pepper; simmer 1 minute longer to blend the flavors. Sprinkle with the parsley and garnish with the lemon. Serve with Green Beans Amandine and steamed brown rice.
