Loner'S Salami-Chicken Duo Recipe
Ingredients
2 chicken drumsticks with thighs
1 slice (1 ounce) salami
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon leaf oregano, crumbled
Dash pepper
3 tablespoons vegetable oil
Directions
Cut through chicken legs at joints to separate drumsticks and thighs, then cut an opening along bone of each drumstick and in meaty part of each thigh with a sharp knife to make a pocket for stuffing.
Cut salami into 4 strips; stuff 1 strip into each piece of chicken.
Shake pieces, a few at a time, in mixture of flour, salt, paprika, oregano, and pepper in a bag to coat evenly.
Cook pieces slowly in vegetable oil in a medium-size frying pan 20 minutes; turn; cover loosely.
Cook 20 minutes longer, or until tender and crisply golden.
Remove from pan and drain on paper towel.
Wrap tightly in foil and place in oven or refrigerator to keep.
