Ingredients

 Frozen chopped spinach package1 , thawed
 2 cups low fat cottage cheese
 Zucchini1 Medium, minced
 Celery stalks2 , minced
 1 bunch green onions, green part only, minced
 Snipped parsley2 Tablespoon
 1 teaspoon dried2 Teaspoon, snipped
 2 teaspoons snipped fresh or 1teaspoon dried thyme leaves
 4 eggs, lightly beaten
 Salt1/2 Teaspoon
 Ground pepper1/8 Teaspoon
 Lettuce leaves

Directions

Press all liquid from spinach.
Combine all ingredients, except lettuce leaves, in a bowl.
Mix thoroughly.
Spoon mixture into a lightly oiled 9 inch pie plate.
Bake at 375°F 45 minutes.
Cut into wedges toserve.
Serve hot, or refrigerate until chilled and serve on lettuce.
