Loin Of Pork A La Boulangere Recipe
Ingredients
| 4 1/2 pounds loin of pork | ||
| Salt | 1 Tablespoon | |
| 8 potatoes, peeled and sliced | ||
| Onion | 1 , chopped | |
| Parsley | 1 Teaspoon, chopped | |
| Pepper | 1 | |
| Butter | 2 Tablespoon | |
| Water | 1/2 Cup (16 tbs) | |
Directions
Season pork with salt.
Place in large roasting pan; roast at 425° for 1 hour, turning several times to brown all over.
Remove pork from pan and pour off surplus fat.
Make the gravy by deglazing the pan with a small quantity of water.
Remove gravy from pan and set aside.
Mix potatoes with onions, parsley and remaining salt and pepper.
Put potato mixture in the pan; dot with butter, and lay meat on top.
Add enough water to almost cover potatoes.
Bring to a boil.
Return to oven.
Reduce heat to 400°, and cook about 1 1/2 hours longer or until done.
Reheat gravy to serve with the meat.r
