Directions
Heat the oil and fry the lobster for 1 minute.
Wash and drain the bean sprouts, then add to the pan, stirring for 1 minute over fierce heat.
Mix the cornflour (cornstarch) and sugar together to a smooth paste with the water and soy sauce.
Add to the pan and heat gently, stirring until slightly thickened.
Chop the spring onion (scallion) finely, add to the pan, and mix well.
