Lobster Spread On Belgian Endive Recipe

Ingredients
2 hard cooked eggs 2
3 tbsp mayonnaise 50 mL
1 can (2.5 oz/71 g) lobster, drained 1
1/2 tsp lemon juice 2 mL
Pinch cayenne pepper Pinch
3 Belgian endives 3
GARNISH
Red or black caviar
Directions
Remove egg yolks and finely chop; set whites aside.
Combine yolks with 2 tsp (10 mL) of the mayonnaise; set aside.
In blender or food processor, combine egg whites, lobster, lemon juice, cayenne pepper and remaining mayonnaise; blend until smooth.
(Recipe can be prepared to this point, covered and refrigerated for up to 1 day.) Separate Belgian endive leaves.
Spoon 1 tsp (5 mL) lobster mixture onto stem end of each leaf.
Top with 1/2 tsp (2 mL) egg yolk mixture.
Garnish with sprinkle of caviar.
