Lobster Bisque Recipe

Ingredients

 
1 1/2 c carrots
 
1 sm. onion
 
1/2 lb. uncooked lobster
 
1 c. butter
 
2 tbsp. dry sherry
 
1/2 c. dry white wine
 
3/4 c. chicken broth
 
1 tbsp. tomato puree
 
1 bay leaf
 
2 tbsp. minced parsley
 
Pinch of thyme
 
8 tbsp. flour
 
4 c. milk
 
4 tbsp. cream

Directions

Together in a blender blend carrots & onions.Minced lobster & keep it aside.In a pan,melt half cup of butter & stir in the carrots & onion,saute them for a while & add lobster meat to it.Let it cook for a minute & add sherry to it.Add wine,chicken broth,bay leaf,tomato puree,parsley & thyme,let the mixture simmer for over medium heat for 15-20 mintues.
In a separate saucepan,melt the remaining butter & stir in flour & make a mix of the two ingredients.Give it a good mix & add hot milk(you can use low fat or full cream milk for this)to it beating it continuously with a whisker.Transfer this to a pan & let it simmer for 15 mintues,add cream to this & season it to taste.
Serve it hot.
