Ingredients

 Lobster1
 Butter3 Tablespoon
 Flour3 Tablespoon
 Chicken stock3/4 Cup (16 tbs)
 Cream3/4 Cup (16 tbs)
 Bay leaf1/2
 Salt1/2 Teaspoon
 Pepper1/8 Teaspoon
 Parsley1 Teaspoon, minced
 Lemon juice1 Teaspoon
 Egg yolks2
 Patty shells- 2

Directions

GETTING READY
1.Start by removing the meat from the lobster and cut them into dice
MAKING
2.In a pan, melt butter, blend in flour, add chicken stock, cream and bay leaf
3.Cook them until the mixture thickens and make sure to keep stirring constantly
4.Now add salt, pepper, parsley and lemon juice and cook for 5 minutes
5.Remove bay leaf
6.Add lobster and heat thoroughly
7.Add slightly beaten egg yolks and cook 1 minute longer, keep stirring constantly
8.Remove to a hot platter
SERVING
9.Serve with a sauce of your choice or with salads
