Lobster With Mint Vinaigrette Recipe
Ingredients
| Lime juice | 1/4 Cup (16 tbs) | |
| Olive oil | 2 Tablespoon | |
| Carrots | 1 Cup (16 tbs), diced | |
| Celery | 1 Cup (16 tbs), diced | |
| Shallots | 1/4 Cup (16 tbs), minced | |
| Dried mint | 1/2 Teaspoon | |
| Cooked Lobster- 1 1/2 cups, chopped | ||
| Papayas 2nos, chopped | ||
| Spinach | 2 Cup (16 tbs), shredded | |
Directions
MAKING
1) In a large bowl, combine together the lime juice, oil, carrots, celery, shallots and mint.
2) Add the lobster and papayas to the vegetable mixture and mix well.
3) Chill in the refrigerator.
4) In a shallow salad bowl, arrange the spinach.
SERVING
5) Serve the salad on the spinach.
