Ingredients

 Butter/Margarine1/4 Cup (16 tbs)
 Flour4 Tablespoon
 1 cup cube or canned chicken broth or bouillon
 1 cup light cream, milk or evaporated milk
 2 tablespoons white wine or sherry
 Salt1/2 Teaspoon
 Cayenne1/2 Teaspoon
 2 to 2 1/2 cups coarsely chopped, canned or cooked lobster meat
 Parmesan cheese1/2 Cup (16 tbs), grated

Directions

1. Start oven, set at Moderate, 350° F. Rub a 1 1/2 quart baking dish, or 4 or 6 small casseroles with margarine or butter.
2. Melt the butter or margarine, blend in the flour, gradually add the chicken broth and the cream or milk. Stir and simmer about 3 minutes, until the mixture is thick and smooth. Add the lobster meat, wine, salt and cayenne.
3. Pour the mixture into the baking dish and sprinkle with the cheese. Or use 4 or 6 individual casseroles. Bake 15 or 25 minutes, according to size.
