Cheesy Lobster Thermidor Recipe
Ingredients
| 6 lobsters, 1 1/2-2 lbs. each | ||
| 6 tablesp. butter or margarine | ||
| 2 tablesp. flour | ||
| Prepared mustard | 1/2 Teaspoon | |
| Onion | 1/2 Teaspoon, minced | |
| Salt | 1 Teaspoon | |
| Pepper | 1/4 Teaspoon | |
| 2 c. light cream or top milk | ||
| 3 tablesp. Sherry | ||
| 1/2 c grated processed American Cheddar cheese | ||
| Lemon wedges | ||
Directions
Reserve the lobster shells, wash well, fit tails back into body, and remove the thin upper shell from the tail with scissors.
Reserve claw meat for garnish.
Cut remaining lobster meat in cubes.
Melt butter in double boiler, stir in flour, mustard, onion, salt, pepper, and cream.
Add lobster and heat until thickened, while stirring.
Add Sherry and refill the lobster shells with mixture.
Garnish top of mixture with the reserved claw meat, sprinkle with the grated cheese, and place under the broiler until golden brown on top.
Serve with lemon wedges.
