Ingredients

 Onion1/2 Teaspoon, finely chopped
 Lime1/2
 Lobster meat1 pound, cooked
 Limes or Lemons Juice- 2 nos., squeezed, to taste
 Extra-Virgin Olive Oil- 1 tablespoons
 Tomato1 Tablespoon, chopped
 Lettuce3/4 Cup (16 tbs), finley sliced
 Radish1 Tablespoon, chopped
 Cilantro1 Tablespoon, chopped
 Oregano1 Teaspoon
 Salt1/2 Teaspoon
 Avocado1

Directions

MAKING
1) In a small bowl, mix together onion and 1/2 lime.
2) Allow the onions to rest 30 minutes.
3) In a large bowl, place the lobster meat and add juice of 2 limes and toss.
3) Stir in olive oil to the lobster meat and toss.
4) Stir in remaining ingredients, except avocado, and toss lightly but well.
5) When read to serve, peel, stone and slice avocado.

SERVING
6) Pile the Lobster Salpicon on the serving platter and arrange on top.
