Lobster Salpicon Recipe
Ingredients
| Onion | 1/2 Teaspoon, finely chopped | |
| Lime | 1/2 | |
| Lobster meat | 1 pound, cooked | |
| Limes or Lemons Juice- 2 nos., squeezed, to taste | ||
| Extra-Virgin Olive Oil- 1 tablespoons | ||
| Tomato | 1 Tablespoon, chopped | |
| Lettuce | 3/4 Cup (16 tbs), finley sliced | |
| Radish | 1 Tablespoon, chopped | |
| Cilantro | 1 Tablespoon, chopped | |
| Oregano | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Avocado | 1 | |
Directions
MAKING
1) In a small bowl, mix together onion and 1/2 lime.
2) Allow the onions to rest 30 minutes.
3) In a large bowl, place the lobster meat and add juice of 2 limes and toss.
3) Stir in olive oil to the lobster meat and toss.
4) Stir in remaining ingredients, except avocado, and toss lightly but well.
5) When read to serve, peel, stone and slice avocado.
SERVING
6) Pile the Lobster Salpicon on the serving platter and arrange on top.
