Lobster Orange Cups Recipe
Lobster orange cups are savory tossed lobster and orange bits served in lettuce lined bowls or cups.chilled and flavored with mayonnaise and horseradish, the lobster orange cups are spiced with a dash of nutmeg and can be served as a side in meals or as appetizer.
Ingredients
| 1 5-ounce can lobster, drained and cartilage removed | ||
| 3 large oranges, peeled and sectioned | ||
| 2 tablespoons mayonnaise or salad dressing | ||
| Orange peel | 1/4 Teaspoon, grated | |
| Orange juice | 2 Tablespoon | |
| Prepared horseradish | 1/4 Teaspoon | |
| Whipping cream | 1/2 Cup (16 tbs), Whipped | |
Directions
Break lobster into 1/2 inch pieces; sprinkle with 34 teaspoon salt.
Toss with orange sections.
Chill.
To prepare dressing, combine mayonnaise, orange peel, orange juice, and horseradish.
Gently fold in whipped cream.
Heap chilled lobster mixture in individual lettuce-lined bowls or sherbet glasses.
Pass whipped cream dressing.
Top with dash of nutmeg, if desired.
