Lobster Newburg Spiced With Nutmeg Recipe
Ingredients
| Butter | 6 Tablespoon | |
| 2 cups coarsely cut lobster meat | ||
| Flour | 2 Tablespoon | |
| Dry sherry | 1/2 Cup (16 tbs) | |
| Egg yolks | 4 | |
| 2 cups thin cream | ||
| Salt | To Taste | |
| Dash Tabasco | ||
| Nutmeg | 1/8 Teaspoon | |
| 4 patty shells or 4 pieces toast | ||
Directions
Heat butter in blazer pan over moderate heat and cook lobster for 3 minutes.
Sprinkle with flour and cook 1 minute longer.
Place over hot water in pan and add sherry and cook until hot.
Mix egg yolks with cream and add slowly to lobster, stirring constantly.
Continue to cook and stir until mixture thickens.
Add seasonings.
