Creamed Lobster Newburg Recipe
Lobster newburg is a creamy lobster recipe. Prepared with heavy cream and flavored with madiera or sherry, the lobster newburg is spiced with cayenne pepper and can be served with rice.
Ingredients
1 1/2 cups cooked lobster meat
Cayenne
1 cup heavy cream
4 tablespoons butter
1/4 cup Madeira or sherry
Salt
3 egg yolks, lightly beaten
Directions
Cut lobster meat in large chunks.
Heat butter in a heavy saucepan, add lobster, season with a little salt and cayenne, and cook for a few minutes.
Pour in cream and bring to a boil, then add Madeira or sherry.
Pour some of the hot liquid into the egg yolks, a little at a time, beating hard.
Pour back into lobster mixture and cook over a very low heat (or in a double boiler), stirring constantly, until slightly thickened.
Do not boil.
