Lobster Mermitage Recipe

Ingredients

 
1 cup butter
 
4 cups lobster meat
 
Salt and pepper to taste
 
Juice of 1 large lemon
 
1 1/4 cups heavy cream
 
1/3 cup Hine 5 Star Cognac
 
1/6 cup Mohawk anisette
 
1/4 teaspoon paprika

Directions

Heat butter and add lobster to pan.
Heat until mixture is warm; do not allow butter to burn.
Add salt, pepper and lemon juice.
Keep stirring.
Add cream and reduce heat.
Add Cognac and anisette when ready to serve.
Ignite and spoon into the center of a ring of cooked rice.
Decorate with paprika.
