Lobster Mayonnaise Recipe
Ingredients
| 4 small or 2 large lobsters, boiled | ||
| Head of lettuce | 1 | |
| Watercress | 1 Bunch (100gm) | |
| 4 tomatoes, peeled and sliced | ||
| Green olives | 8 , pitted | |
| Mayonnaise | 1 Cup (16 tbs) | |
Directions
Split the lobsters in half.
Crack the claws.
Lift out the tail meat and cut it into slices.
Wipe the shells with a little oil to make them shiny.
Put the tail meat back into the shells, red side up.
Place the claw meat in the top part of the shells.
Arrange the lobster on a bed of lettuce and watercress.
Garnish with sliced olives and tomatoes.
Serve with the mayonnaise, well chilled.
