Ingredients

 Chopped parsley1 Cup (16 tbs)
 1 Medium-size Onion, chopped
 3 Tbs. Olive Oil or Salad Oil
 Garlic1 Clove (5gm), mashed
 2 - 8 Oz. Cans Tomato Sauce
 2 - 6 Oz. Cans i omato Paste
 1-1 Lb. 12 Oz. Can Pear-shaped Italian Tomatoes
 Dry red wine1/2 Cup (16 tbs)
 Salt1/2 Teaspoon
 Oregano leaves1 Teaspoon
 Basil leaves1 Teaspoon
 Rosemary1 Teaspoon
 Pepper1/2 Teaspoon
 Sugar1/2 Teaspoon
 Mushrooms1 Pound, sliced
 3/4 Lb. Teleme Cheese
 4 Large, Cooked Lobster Tails, cut into bite-size pieces

Directions

In large saucepan, heat oil and add parsley, onion and garlic.
Cook, stirring, until onions are soft.
Stir in tomato sauce, tomato paste and tomatoes, breaking up tomatoes with fork.
Add also the tomato liquid, wine, salt, oregano, basil, rosemary, pepper, sugar and mushrooms.
Cook over low heat, stirring occasionally, for 1 1/2 hrs In bottom of casserole, cover with sauce.
Alternate sauce, lobster pieces and teleme cheese, ending with teleme cheese.
Bake in 450 degree oven for 7 to 10 minutes, or until cheese melts.
