Liver With Apple Slices Recipe

450 g/1 lb lambs liver
 
2 teaspoons sunflower oil
 
2 to 3 dessert apples
 
300 ml/1/2 pint apple juice

Directions

Cut the liver into thin strips.
Heat the oil in a wok or frying pan and toss the liver in it for 1 or 2 minutes, just to colour it slightly.
Transfer to a plate using a slotted spoon.
Core the apples but do not peel them.
Cut into thin slices or rings.
Pour the apple juice into the wok or frying pan, bring to the boil, add the apple slices and cook for 5 minutes.
Return the liver to the pan and cook for 2 to 5 minutes, according to how well you like it cooked.
