Liver-Bacon Croquettes Recipe
Ingredients
| 3/4 pound pork liver, Salted water | ||
| Onion | 1/2 Small | |
| 3/4 cup canned tomatoes or tomato juice | ||
| Dry bread crumbs | 1/2 Cup (16 tbs) | |
| 2 teaspoons prepared mustard, Salt and pepper to taste | ||
| 1/4 cup dry bread crumbs or flour 5-6 slices bacon | ||
| 1 tablespoon melted drippings | ||
Directions
Cover and cook liver in salted water about 10 minutes.
Drain and cool.
Mince liver and onion together; add tomatoes, 1/2 cup crumbs, mustard and seasonings.
Form into 5 or 6 cylindrical croquettes.
Roll each in crumbs or flour, and encircle with bacon.
Secure with toothpicks, brush with melted drippings and bake at 400 °F. about 20 minutes or until bacon is crisp.
