 Beef liver1/2 Pound
 Mushrooms12 Large
 8 cherry tomatoes or 4 medium tomatoes, quartered
 Onions4 , quartered
 2 green peppers, each seeded and cut in 8 chunks
 Vegetable oil
 Hot cooked rice

Directions

Thread liver slices and assortment of vegetables onto four 14-inch (36 cm) skewers.
Brush with oil and broil about 4 inches (10 cm) from heat, turning frequently and brushing occasionally with oil, for about 5 minutes or until liver is cooked as desired.
Serve on bed of hot rice.
