Liver, Bacon & Onion Skewers Recipe

Ingredients
12 strips bacon 2 pounds beef liver, sliced 1/2 inch thick
Salt and pepper 2 cans (8 oz. each) small whole onions, drained
Directions
Partially cook bacon until it starts to brown but is still limp; drain on paper towels.
Cut liver into 1-inch pieces and sprinkle lightly with salt and pepper to taste.
To prepare 6 skewers, pierce one end of a bacon strip with a skewer, then thread on apiece of liver and an onion.
Cover with the bacon strip, pierce it again; add another strip of bacon, and another piece of liver and an onion, and add the other end of the bacon strip, so that the bacon forms s curves around meat and onions.
Repeat the process, using 2 strips of bacon for each skewer.
Place on lightly greased grill 4 to 6 inches above a solid bed of medium-glowing coals.
Cook, turning often, for 6 to 8 minutes or until bacon is crisp and liver is cooked but still slightly pink inside.
