Ingredients
| 1/2 lb. veal kidney, outer fat and membrane removed, halved, cored and cubed | ||
| 1/2 lb. veal liver, membrane removed, cubed | ||
| Cucumbers | 2 | |
| Salt | To Taste | |
| Cornstarch | 1 Teaspoon | |
| Soy sauce | 2 Tablespoon | |
| Lemon juice | 1 1/2 Tablespoon | |
| Lard | 3 Tablespoon | |
Directions
Sprinkle the diced cucumbers liberally with salt and let them stand for half an hour.
Drain the cucumbers, rinse them and dry them well.
Moisten the cornstarch with the soy sauce and lemon juice.
Heat the lard in a heavy iron skillet.
Stir fry the kidney for a few minutes.
Move the kidney to one side of the skillet and add the liver.
Stir and fry until it changes color.
Add the cucumbers and fry them for a few minutes.
Pour the thickened soy sauce into the skillet and stir until the sauce thickens.
