Ingredients

 
3 tablespoons butter
 
3 tablespoons flour
 
1 cup milk
 
1 teaspoon salt
 
Dash of pepper
 
Dash of cayenne pepper
 
1 1/2 cups grated sharp cheese
 
1/2 teaspoon dry mustard
 
1/4 teaspoon Worcestershire sauce
 
1 teaspoon grated onion or onion powder
 
3 cups cooked rice
 
2 tablespoons milk
 
2 eggs, well beaten

Directions

Melt butter in a sauce pan.
Add flour and stir until blended.
Add milk gradually, stirring constantly.
Add salt, pepper and cayenne, and cook, stirring, over low heat until thick and smooth.
Add cheese, mustard, Worcestershire and onion.
Mix well then add rice and mix thoroughly.
Chill.
Shape chilled mixture into 1-inch balls using about 1 1/2 teaspoons of the mixture for each ball.
Add milk to eggs, and blend.
Dip each ball in egg- milk mixture, then roll in bread crumbs.
Fry in shallow hot fat until golden brown.
Drain on absorbent paper.
Serve piping hot.
