Directions

Brown all the little onions in a pan with some oil; sprinkle with castor sugar, and just cover with stock.
Cook covered to start with then let the liquid evaporate in the pan, with the lid off.
Arrange the onions in a warmed dish; put on each one a rolled fillet of anchovy.
Add vinaigrette sauce made with plenty of pepper, but no salt.
