Little Rolls Recipe
Ingredients
| 125 g -5 oz butter | ||
| 300 g - 10 oz self raising flour | ||
| Salt | 1 Pinch | |
| Few drops of vanilla essence | ||
| Caster sugar | 6 Tablespoon | |
| Baking powder | 1 Teaspoon | |
| Eggs | 2 | |
| Coconut | ||
| 85 g -3 oz butter | ||
| Vanilla essence | 1 Teaspoon (Filling) | |
| 175 g - 6 oz coconut | ||
| 55 g - 2 oz icing sugar | ||
| 55 g - 2 oz coloured cherries | ||
Directions
Rub the butter into the flour, baking powder and salt.
Add the sugar and the vanilla.
Beat together the eggs and take 2/3rds and use this to make a soft biscuit dough.
Roll out to 5 mm thick then cut into small rectangles.
Spoon the filling into the triangle and roll up sealing the edges well.
Dip into the beaten egg and roll in coconut.
Decorate with the small pieces of cherries.
Place on a lightly greased baking sheet and bake for 15 minutes.
Leave for a few minutes on the sheet before transferring and cooling on a wire tray.
Make the filling by blending together the butter and the icing sugar.
Then add the rest of the ingredients.
Leave the cherries for decorating.
