 Celery1 Cup (16 tbs), finley minced
 Finely minced parsley1 Cup (16 tbs)
 Olive oil1 Cup (16 tbs)
 Red wine vinegar2 Cup (16 tbs)
 Garlic1 Teaspoon, minced
 Salt1 Tablespoon
 Black pepper1 Teaspoon
 Anchovies1 Teaspoon, chopped
 Capers1 Tablespoon, minced

Directions

Mix the herbs i.e., the celery and parsley in a large bowl.
Add the oil, vinegar, garlic, salt, and pepper.
Whip vigorously.
If one prefers a more exotic mixture, add the anchovies and/or the minced capers.
This will keep for 1 week in the refrigerator.
