Little Joe's Vinaigrette Recipe
Ingredients
| Celery | 1 Cup (16 tbs), finley minced | |
| Finely minced parsley | 1 Cup (16 tbs) | |
| Olive oil | 1 Cup (16 tbs) | |
| Red wine vinegar | 2 Cup (16 tbs) | |
| Garlic | 1 Teaspoon, minced | |
| Salt | 1 Tablespoon | |
| Black pepper | 1 Teaspoon | |
| Anchovies | 1 Teaspoon, chopped | |
| Capers | 1 Tablespoon, minced |
Directions
Mix the herbs i.e., the celery and parsley in a large bowl.
Add the oil, vinegar, garlic, salt, and pepper.
Whip vigorously.
If one prefers a more exotic mixture, add the anchovies and/or the minced capers.
This will keep for 1 week in the refrigerator.
