Lite Blue Cheese Dressing Recipe
Ingredients
| Blue cheese | 1/2 Cup (16 tbs), crumbled | |
| 1 cup dry curd or nonfat cottage cheese | ||
| 1/4 cup nonfat or reduced-fat mayonnaise | ||
| 1/4 cup nonfat buttermilk or nonfat yogurt | ||
| 1/4 cup white wine vinegar or red wine vinegar | ||
| Garlic | 1 Teaspoon, crushed | |
| Ground white pepper | 1/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
Directions
1. Place 1/4 cup of the blue cheese and all of the remaining ingredients in a food processor or blender, and process until smooth. Stir in the remaining blue cheese.
2. Transfer the dressing to a small bowl, cover, and chill for several hours or overnight before serving.
