Linguine With Yellow Pepper Sauce Recipe

Ingredients

 
1 lb. linguine or fettuccine (preferably black squid pasta, if able to obtain)
 
4 tbsp. butter
 
2 medium yellow peppers, seeded and cut into slices
 
2 cloves crushed garlic
 
1 shallot or green onion,chopped
 
1 bay leaf
 
Salt and pepper
 
1/2 cup chicken stock
 
4 tbsp. butter

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Meanwhile, prepare sauce
Add to butter and saute just until peppers become soft.
Add and simmer for 5 minutes.
Puree in a food processor until smooth.
Add to above pur£e and blend.
Add pasta and toss.
