Linguine With Green Beans, Tomatoes And Pumpkin Seeds Recipe
Ingredients
| Green beans | 2 Cup (16 tbs) | |
| 30 ml / 2 tbsp water | ||
| 3/4 cup / 225 g / 8 oz tomatoes, peeled, seeded and cut into strips | ||
| 1/3 cup / 50 g / 2 oz pumpkin seeds | ||
| 400 g / 14 oz green linguine | ||
| Boiling water | ||
| Salt | To Taste | |
| 15-30 ml / 1-2 tbsp oil | ||
Directions
Put the beans in a dish with the water, cover with vented cling film (plastic wrap) and cook for 4 minutes.
Add the tomatoes and cook for a further 4 minutes. Add the pumpkin seeds. Keep covered and keep warm.
Put the linguine in a deep pot with enough boiling water to cover. Add a pinch of salt and a few drops of oil. Cover and cook for 8 minutes. Set aside, covered.
Drain the vegetables and dress with the oil. Reheat, covered, for 1 minute.
Drain the pasta and mix in the vegetables.
Add the tomatoes and cook for a further 4 minutes. Add the pumpkin seeds. Keep covered and keep warm.
