Ingredients

 
8 oz. linguine
 
1 1/2 cups plum tomatoes, diced
 
1/3 cup finely chopped onion
 
1/2 cup goat cheese, crumbled
 
1/4 cup Asiago cheese, crumbled
 
1 cup grated low-fat mild cheese (i.e., mozzarella, Havarti, etc.)
 
1 tbsp. mixed fresh herbs, chopped (rosemary, sage, thyme, oregano, or 1 tsp. mixed dry)
 
Salt and pepper to taste
 
1 egg white

Directions

Cook in boiling water until al dente (firm to the bite).
Drain and set aside.
Combine in casserole dish.
Add 2/3 cup low-fat cheese and mix with above, saving other third for topping.
Add to the casserole dish above and mix.
Add pasta, combine, and top with remaining low-fat cheese.
Bake approx 15 minutes, just until hot.
