Linguine And Broccoli With Peanut Sauce Recipe
Ingredients
1/2 cup plus 2 tablespoons creamy peanut butter
1/4 cup reduced-sodium or regular soy sauce
2 tablespoons Oriental sesame oil
2 teaspoons distilled white vinegar
1/2 cup chicken broth
2 stalks broccoli
1 large red bell pepper
1 bunch scallions (6 to 8)
1/2 cup packed cilantro sprigs (optional)
1/2 pound linguine or spaghetti
2 tablespoons vegetable oil
3 cloves garlic, minced or crushed through a press
Directions
1 Bring a large pot of water to a boil.
2 Meanwhile, in a food processor or blender, combine the peanut butter, soy sauce, sesame oil and vinegar, and blend until smooth. Gradually beat in the chicken broth until smooth.
3 Cut the broccoli and bell pepper into bite-size pieces. Coarsely chop the scallions and cilantro (if using).
4 Add the pasta to the boiling water and cook until al dente, 7 to 9 minutes, or according to package directions.
5 In a large skillet, warm the vegetable oil over medium-high heat until hot but not smoking. Add the garlic and cook for 1 minute, stirring frequently. Add the broccoli and bell pepper and stir-fry until the vegetables are just tender, 5 to 8 minutes.
6 Stir the scallions and cilantro (if using) into the vegetables and remove the skillet from the heat.
7 Drain the pasta and toss it with the vegetables and peanut sauce.
