Directions

In saucepan combine 1 envelope unflavored gelatin (1 tablespoon); 1/3 cup sugar; and 1/4 teaspoon salt.
Stir in 1 1/4 cups cold water.
Stir over low heat till gelatin is dissolved.
Remove from heat.
Add one 6-ounce can frozen limeade concentrate and 1/2 teaspoon grated lemon peel; stir to thaw.
Chill till partially set.
Turn into large bowl; add 2 unbeaten egg whites and 2 to 3 drops green food coloring.
Beat at high speed with electric mixer till light and fluffy, about 1 to 2 minutes.
Pour into 5 1/2 cup mold or eight 5-ounce custard cups.
Chill till firm. (Slight separation into layers may occur.)
